Valentines Chocolate Cupcakes Recipe
Time: 30 minutes
Quantity: 18 cupcakes
Ingredients:
- 1 1/2 cups white flour
- 1 cup white sugar
- ⅓ cup cocoa powder
- 1 teaspoon baking powder
- 1 ½ teaspoons baking soda
- ½ teaspoon salt
- 1 teaspoon cornstarch
- ¾ cup buttermilk (if you don’t have any, just mix 1 tsp white vinegar with 3/4 cup milk)
- ⅓ cup olive oil
- ½ cup brewed coffee
- 2 eggs
- 2 teaspoons vanilla extract
- 2 tablespoons plain yogurt
Method:
- First, preheat the oven to 350°F. Then line two cupcake pans with 18 cupcake liners.
- In a medium/large bowl, mix the seven dry ingredients on low speed until combined.
- In a small bowl, whisk together buttermilk, oil, eggs, brewed coffee, and vanilla.
- Slowly pour the wet mix into the dry mix bowl and combine - don’t overmix!
- Add yogurt and mix briefly until combined.
- Fill each cupcake liner ¾ full then bake for 16-18 minutes or until an inserted toothpick comes out clean.
We decided to use Swiss meringue buttercream. We find it's not as sweet as traditional American buttercream, and a lot lighter and airier. Sometimes buttercream can be too sweet and heavy, and many people don’t care for it. Our husband tried one of these cupcakes tonight, and despite not having a sweet tooth, he inquired about the type of icing used!
