This Coconut White Chocolate Bundt cake is a keeper, and once you've made it, you wont be able to stop - it's so good you guys! Like, probably our favorite cake ever.

And the best part of this viral copycat Tom Cruise cake? It's easy to make with simple ingredients you probably have most of already in your pantry.

White Chocolate Coconut Bundt Cake Recipe

Time: 1 hour 20 minutes
Ingredients:
- 3 c baking flour
- 1 1/4 tsp salt
- 2 tsp baking powder
Wet
- 1/2 c milk
- 1/2 c coconut milk (from a can)
- 1 tbsp coconut extract
- 1 3/4 c sugar
- 3 large eggs
- 2 egg whites
- 4 oz white chocolate, melted
Buttercream Icing
- 1/2 c butter
- 4 oz cream cheese
- 2 1/2 c icing sugar
- pinch of salt
- 1 tsp coconut extract
Extras
- 1 c shredded sweetened coconut flakes
- 1 c toffee baking bits
- 1 c toasted coconut flakes
Instructions
1. Preheat oven to 325 degrees F. Use a 12 c bundt pan and smear inside with room temp butter (or spray). Spinkle with sugar
2. Whisk dry ingredients (flour, salt and baking soda) in a mixing bowl
3. Mix wet ingredients (milk, coconut milk and coconut extract) in another mixing bowl
4. In a third mixing bowl, stir butter and sugar on slow-medium speed for 2 minutes
5. Stir in melted chocolate, egg whites and eggs, and beat for 3 more minutes
6. Pour in dry and wet ingredients and stir until just combined.
7. Pour mixture into bundt pan and then sprinkle toasted coconut flakes on the top of the mixture then sprinkle toffee baking bits. Bake for 50 minutes or until toothpick come out clean. Allow to cool before icing.
8. Now let's start the coconut buttercream icing! Mix together in a stand mixer butter and cream cheese for 2 minutes. Gradually add icing sugar, coconut extract and salt. Beat together for 5 minutes. Once cake has fully cooled, spread the buttercream icing around and on top of cake, then sprinkle with shredded coconut flakes.
